Mini Cheddar-Apple Turkey Meatloaves

 It's Fall... bring on the fun activities like pumpkin and apple picking. My family especially loves apple picking... however, what on earth do we do with all of the apples?!?  






Here's a fun take on a classic, meatloaf... but with a Fall spin and perfect for a weeknight meal. Pair with Cauliflower Mashed Potatoes for a complete comfort food feel!


Mini Cheddar-Apple Turkey Meatloaves

Makes 6-8 servings, total time 35min


Ingredients:

Cooking spray

2lbs ground turkey (93/7)

1/4 cup whole wheat breadcrumbs

1/2 medium vidallia onion, finely chopped

1 medium apple, peeled, cored, and chopped

1 egg

1 tsp kosher salt

1 tsp pepper

1 cup shredded cheddar cheese


Directions:

Preheat oven to 375 degrees.

Combine ground turkey and all ingredients, reserving 1/4 cup of cheese to side. 

On a rimmed baking sheet, spray with cooking spray.

Then form 12 mini loaves from meat mixture (or you can use muffin pan).

Bake for 15 minutes, then sprinkle remaining cheese on top, bake for another 5 minutes or until loaves are cooked through (165 degrees internal temp).

Lemon Herb Salmon

 On Today's episode of Health & Self on DETV , I shared a Thayer Family Favorite, Lemon Herb Salmon. We love this recipe because it's fast, flavorful, and makes great leftovers. Salmon is a great source of protein. It's high in vitamin B, potassium, and loaded with omega-3 fatty acids. And with the added lemon and herbs, you get some bonus vitamin C.  This salmon recipe can be paired with any vegetable, like sautéed spinach & kale, broccoli, asparagus, or anything.

Lemon Herb Salmon


2 tbsp fresh parsley, chopped

2 tbsp fresh basil, chopped

2 cloves of garlic, finely chopped

1 tbsp olive oil

1 tbsp lemon juice

1 tsp lemon zest

½ tsp kosher salt

½ tsp black pepper

1+ lb raw salmon

  • Parchment paper


Preheat oven to 375.

In a small bowl, combine parsley, basil, garlic, olive oil, lemon juice, zest, salt & pepper.

Place salmon on parchment paper lined baking sheet.

Top salmon with lemon herb mixture, and bake for 15-18 min (or until desired doneness).
